Chocolate Pumpkin Muffins

These are the best, easiest, yummiest little muffins. My mother in law, Bonnie, told me about them last week while she was visiting and I was fascinated and had to try them. The girls are eating them up right now...
Here's the recipe:
1 chocolate cake mix
1 small can of pumpkin (15oz)
Mix them together, put in muffin pan, bake and enjoy!
I baked them at 350 F for about 20-25 minutes, delicious.

Funny thing- On the very small list of things that we won't be able to get in Lisbon... cake mixes and canned pumpkin. So we will enjoy this little treat for another month and then it can be on our list of things that people can bring us when they come visit:)

Hey! I read your comment on Tess' blog and thought I'd say 'hi' and tell you how neat I think it is that we will (hopefully) be in the same cluster...Your blog is really fun and the muffins sound really tasty...I'm in the process of trying to find a recipe for bread that my family likes since sliced bread isn't as available or cheap in Italy as it is here...I'm sure I'll probably give this up soon and just pray hard for a great bakery near our home in Rome :) I look forward to getting to know you better in the coming years!!

I'm holding out hope for you that you will somewhere be able to get cake mixes...I mean, we can get there here! Our American Dollar store even had some imported from america this week...so I got one of each kind they had. :) They have indian brands here.... what do Portugese not eat cake or have people not "searched"?? I know here if we didn't search store after store we wouldn't think there was tons of stuff. We had volunteers here today and I still made them a homemade chocolate cake, I'm not confident the store will keep carrying the mixes so... :)

And...no other liquid, just the pumpkin?? Sound very yummy and I have some pumpkin so can make them easy!

Hey, I'm so glad you tried them! Aren't they just incredibly soft and moist? The greatest part is that they are so good for you...and only one point each on the WW diet, well, as if I'm countng. If you want to cheat a little bit, you can also add a few chocolate chips and make Chocolate, Chocolate Muffins. I'm sure they aren't exactly one point, but they are delicious!
